Everyone loves this stuffed bell pepper healthy recipe. It’s colorful, healthy and the saffron rice brings great flavor.
Ingredients
- 1 bag of saffron rice (5 oz)
- 2 Red Bell Peppers
- 1 green bell pepper or poblano pepper if you like more spice
- 2 tomatoes, chopped and seeded
- ¼ cup Cilantro, chopped
- 1 tsp olive oil
- 2 garlic cloves
- ¾ cup shredded cheese
- 2 Tbsp water
Directions
Prepare Saffron rice according to package.
As rice cooks, slice 2 red bell peppers in half lengthwise. Place in a microwavable bowl with lid and microwave for 4 minutes. Pat dry with a paper towel.
Core tomatoes and scoop out seed. Dice tomato, green bell pepper (or poblano pepper), and cilantro.
Add olive oil to skillet and heat over medium heat. Add tomato, bell pepper, ½ cilantro, and garlic. Cook for 3 minutes.
Stir veggie mixture into rice and add ½ cup cheese.
Place bell peppers cut side up into skillet. Fill with rice mixture and sprinkle with remaining cheese. Add water to skillet. Cover with lid and heat over medium-low heat for 3-5 minutes until cheese melts.
Enjoy with a side of black beans and steamed broccoli for a complete healthy meal!
