April 13, 2020Easter 2020 hopped up on me this year. 😂Without the endless Easter egg hunts usually held at the schools and in the community, I didn’t realize Easter was just a week away. I love Easter. I love celebrating Jesus who died for me, the Easter egg hunts, the flowers that are always blooming, and the fun, healthy Easter recipes.
Since I’m a little late to the game this year I’m taking the easy way out for Easter lunch. I promised myself when COVID-19 started I would lower my expectations and give myself a lot more grace. This is me keeping my promise to myself! Plus I think you are going to really love it! It goes to show compromise and prioritizing can be a beautiful thing!!
Thanks to the Food Network, I found Easter lunch on two sheet pans that is ready in less than 40 active cooking minutes!!! If you’ve ever made a holiday meal and been a slave to the kitchen then you are rejoicing with me right now too! This leaves more time for Egg hunts, uninterrupted church service, and fun family time. Everything you need to make Easter lunch is included. I’m just adding some deviled eggs to the menu and some plain veggies in case my kids don’t like the “fancy” roasted veggies!
So here is my Easter Menu.
Easter Breakfast

Bunny Cake – not near as fancy as this one, but you get the concept. Growing up we always made this for Easter so the tradition continues and my kids love to help decorate it!
