December 10, 2019One of the best ways to shop for produce is to simply look and see what is on sell. Usually the produce that is on sell, is in season, so it tastes good. I love grabbing corn on the cob during the summer, because it is so cheap and tastes so sweet! Usually at our grocery store I can get 3 corn on the cobs for under a dollar. Slice them in half and that is a serving of vegetables for 6 people under a dollar! Love bargain shopping!
I gave mashed corn to my son until about 12 months because I was concerned with him choking. After 12 months, I would cut the corn off the cob and give it to him. Now that he is 18 months, he wants everyone to know he is a BIG boy and can eat his corn right off the cob like mommy and daddy!!!

Microwave Corn on the Cob
1. Place corn in microwave. (Husk and all)
2. Cook 2 minutes per corn.
3. Remove with hot pads and let cool until you can comfortably hold the corn.
4. Remove the husk. (Way easier after it is cooked, compared to when it is cold)
5. Enjoy!!
Cooking the corn in the microwave with its husk keeps the corn moister and sweeter, so you really don’t need butter. (Unless you are like my husband who insists it is un-American to not butter corn.) So taste it before you put butter on it and decide for yourself!
While corn doesn’t have as many nutrients as other fruits and veggies, it is still low in calories and has some fiber. So enjoy eating some corn as you fill up half your plate with fruits and veggies!
