December 10, 2019I find it difficult to add veggies to breakfast without getting weird looks from my hubby, but he really likes this recipe. My toddler loves it too! (most of the time anyways!) Usually kids eat best in the morning, because they are hungry and well rested. So if you are having a hard time getting your child to eat veggies, give this recipe a try.
1. Place thawed hash browns in a skillet and cook according to directions.
2. Add any veggies. We like spinach, mushrooms, and onions. If you use frozen spinach, make sure you thaw it first. Mine didn’t turn out so well when i tried it frozen.
3. Last few minutes add egg on top. Serve with salsa.
We also cook a southwest version with bell peppers, jalapeño, and onion.
