December 10, 2019Trying to decide what’s for dinner tonight? Look no further, because here is a quick, yummy, healthy recipe that the whole family will love.
- Brown Rice
- Variety of Veggies: Red, yellow, and green bell peppers, broccoli, onion, celery, corn, and garlic.
1. Cook brown rice. I use my rice cooker, and it always cooks brown rice perfectly. (For those of you who don’t like brown rice try cooking half white and half brown.)
2. Sauté red, yellow, and orange bell peppers, broccoli, onion, celery, corn, and garlic.
3. Toss with brown rice. Season to taste.
Of course you can adapt this recipe to your family’s taste. I just use whatever veggies I have on hand. It works well with any meat: shrimp, chicken, and beef, but the shrimp cooks fastest.
This is one of my recipes that I use when I know dinner time will be rushed. I usually cut up the veggies the night before or during nap time so they are ready to go. I also have used a frozen bag of mixed veggies and it turns out good as well!
