December 10, 2019This is one of my go to recipes. It is perfect for when I don’t feel like cooking or have a cranky toddler who doesn’t want mama to cook. The hardest part is cutting the squash into chunks. The rind is pretty tough. Make sure you use a sharp knife.
Here is what you need:
pork tenderloin (can buy already seasoned)
Seasons for pork if not pre-seasoned. (i.e. lemon pepper, onion powder, garlic powder, salt, pepper, etc.)
onion
butternut squash
olive oil
Here is how you do it:
Preheat oven to 425 degrees. Place meat on foil lined baking sheet or stoneware. (I love stoneware from Pampered Chef!) If your meat is not pre-seasoned, choose your seasonings and sprinkle away. My favorite is garlic powder, salt, and pepper, but I do try other spices to change things up.
Next cut the squash in half and remove the seeds. Then slice into 1 inch chunks. Cut the onion into wedges.
Place squash and onion on pan with meat and lightly drizzle olive oil over squash and onion. Then season with pepper.
The size of your meat will determine how long you will need to cook it. I usually buy a 1 lb pork tenderloin, and it usually takes about 25 minutes. Make sure the internal temperature reaches 145 degrees. Once it is cooked, let it rest for 10 minutes before you slice it. I usually throw a bag of frozen veggies in the microwave at this point to complete our meal.
There you have it. Barely 10 minutes of work for a yummy, healthy meal.
