Happy Earth Day!
December 10, 2019Super Easy Pumpkin Muffins
December 10, 2019My husband has been MIA (missing in action) for most dinners the last few weeks, so I have been lacking motivation to cook for just my little one and me. Especially considering my little one is, by his choice, a vegetarian. Don’t get me wrong it makes it really easy for me to just cook veggies, beans, and pasta, but my recipes are getting old quickly. So I decided it is time for me to add some more vegetarian meals into our mix.
So, where to start. When I look for new recipes online I make sure the recipes meet the following criteria:
- Ingredients are recognizable and I like most of them that are listed.
- Takes about 20 minutes or less of actual work. Maybe 30 minutes if it really looks good.
- If the site has ratings, I make sure it has at least 4 stars and 20 people have rated it.
Here is where I tend to look first:
Allrecipes.com – I’ve been surprised at how many good recipes I have found from their site.
Food Blogs – There are so many out there, but once you find one with similar taste to yours, its like hitting a gold mine!
On Packages of Products – This has surprised me as well, but if someone is trying to sell their product, of course they are going to list a really yummy recipe on their package. One of my favorites is Bush’s Black Bean’s. They have an awesome soup on their label.
Pinterest – Just like everyone else has discovered, pinterest has some great recipes pinned. My problem with pinterest is that I am often drawn to the desserts instead of main meals!
Old-Fashioned Cook Books – Half priced books is one of my favorite places to look. I eat with my eyes, so the cook book must have pictures!
Honestly, I usually have a hard time finding vegetarian meals for us. I tend to find ones that take way more effort than I want to engage in, or recipes that have ingredients that I don’t recognize. Neither is very inspiring to me. But I did find a few that I am willing to try. I’m not sharing yet since they are untested, but the grocery list is made. I’ll let you know the outcome.
