December 10, 2019Whether you’re rushing to the office or have little ones running around, who has time to spend hours preparing a meal? With Valentine’s Day coming up, we wanted to share with you some great ideas for a fun, healthy, affordable twist on classic meals that won’t leave you crunched for time.
Nothing beats the classic toast and eggs breakfast, and this week we’ll show you how to mix that meal up for a great, nutritious start to your loved one’s Valentine’s Day. Then check back in next week we’ll give you a great recipe for a ‘better for you’ dessert that even the kids can help out with!
For this great breakfast entree, all you’ll need is:
- 1 slice of your favorite bread (whole grain/multi grain/rye)
- 1/2 Tbsp butter or butter spray
- 1 egg
- Seasonings
- Heart shaped cookie cutter
**You’ll want to multiply this recipe depending on how many you are serving.
Directions:
Take your cookie cutter and create a heart-hole in the center of the slice of bread. (I didn’t have a cookie-cutter, so I used a knife and it turned out fine!
After you have melted half of the butter into a pan, place the bread in the pan and cook until one side is firm and golden. After you flip, crack one egg into the center of the bread and season it.
I love adding dried herbs to my fried eggs! Rosemary, basil, tarragon, oregano, garlic, cumin, salt, and pepper. I go crazy, and they never turn out the same!
After you season the eggs, let them continue cooking until they are your desired doneness. Then carefully take a spatula and transfer to a plate.
For even more fun, incorporate some fruit (think cherries, strawberries, raspberries, apples, etc.) onto the plate. Cut the fruit into different heart shapes or stick a white chocolate chip into the top of raspberries. Add a couple of slices of turkey bacon or use your cookie cutter to bake heart shaped pancakes and serve with orange juice!
Any little one will love the shapes and colors associated with this yummy meal, and even adults will leave the house happy and satisfied with the thought that went into it. Who wouldn’t, after that meal?
