January 27, 2020You have to try these super simple, scrumptious easy fish tacos! First of all who doesn’t love taco night! Second, shhhh, don’t tell: these tacos are healthy! 😍
Here’s what you need:
Slaw
- 1/4 c. sliced green onions
- 2T cilantro
- 1T lime juice
- 1T vegetable oil
- 1 garlic clove
- 1 t sugar
- 1/2 t cajun seasoning
- 2 c. broccoli slaw mix.
Fish
- 1 pound tilapia
- 1 T cajun seasoning
- 1 avocado, sliced
- 8 corn tortillas
Recipe
Make the slaw by adding everything together. I use bottle lime juice and already pressed garlic to make things even easier and you can’t taste a difference. Cover and refrigerate until ready to serve.
To cook the fish I use my George Foreman, but you can grill or use a skillet. Bake for about 10-12 minutes until temperature is 145 and fish flakes easily. Flake into bite-size pieces
I like to warm my tortillas for 1 minute in the microwave. Then top with fish, slaw, and sliced avocado.
