December 10, 2019My amazing husband spoiled me and made these this week for breakfast. They are too precious (and healthy) to not share! They are very easy to make as well. You only need about 10 minutes to make them!
- Eggs
- Bell Pepper
- Olive Oil
- Toast, whole wheat
- Fruit (optional) – I attempted to make the blueberries look like a cloud.
Here is how you do it:
Slice the bell pepper into rings about 1/2 inch thick. Over medium heat, add olive oil to a skillet and heat until shimmering (1-2 minutes.) Place the bell pepper rings in the skillet. Cook for 2 minutes. Then crack an egg into the bell pepper rings. If the yolk isn’t completely centered, you can move it a little bit. Place the lid on the skillet and cook for 5 minutes for firm eggs. (2-3 minutes if you like runny yolks.)
Make some toast and cut into strips (for the stems) and maybe some leaves if you are feeling creative. Serve with some fruit and a glass of low-fat milk. You now have provided all five food groups for breakfast. Talk about a great start to your day!
