July 20, 2020Two words that have the power to get you excited or make you cringe – meal prepping. Social media can make meal prepping look so cute and fun, while your kitchen may look like a tornado hit it by the time you finish. Dishes pile up and your counters look like the remains of a science experiment. To make matters worse, sometimes the food you make is not quite as delicious as you expected (the worst, right?!). You may think to yourself, “Eating out is so much easier” or “Why do I do this to myself every week?” I hear you! Nobody said meal prepping is easy. Today, I want to let you in on one of my favorite, super simple recipes: pan-grilled chicken and squash nuggets.
The best part: this meal utilizes two main ingredients! It sounds too good to be true, but I promise that’s all it takes. For the nuggets, you can use ground chicken or turkey (although personally, I think the chicken is more visually appealing!); in addition, you can use zucchini instead of squash, or any other moist vegetable. When I look for recipes, I always try to find ones that I can make more versatile or personalized – the great thing about this dish is that it can cater to all kinds of preferences. Ingredients:
- 1/2 lb ground chicken
- 1 c shredded squash (1 whole squash = about 1 cup of shredded squash)
- Olive oil
- Spices and herbs of choice (I used garlic salt, Italian seasoning, cumin, and chili powder!)
Pan-Grilled Chicken and Squash Nuggets Recipe:
1. Shred squash into a medium-sized bowl. Heat a pan over medium heat and add olive oil.
2. Add ground chicken to squash and mix well.
3. Add seasoning.
4. Using hands or a spoon, scoop mixture into by the spoonful into your hot pan or skillet.
5. After 7-10 minutes, flip the nuggets and cook for another 5-7 minutes (they should be a lovely golden brown when you finish!)
