December 10, 2019I hope you’re getting ready for a fun-filled, safe, happy Independence Day weekend full of family, laughter, and celebrating your freedom!
If you plan on celebrating outdoors, you might be looking for something sweet, fresh, and juicy to help cool off the little ones (and the grown-ups too!!) as they run around, splash in the water, or watch fireworks this holiday.
This recipe is sure to do the trick! Sweet, succulent strawberries and fresh, juicy blueberries are the stars in this simple, affordable recipe!
All you need is:
– 1 lb. of strawberries
– 1/2 pint of blueberries
– 2 cups of yogurt (I used Yoplait GreekVanilla Yogurt- it is lower in sugar and calories than any other vanilla yogurt I have found)
-A handful of walnut pieces
First, chop off the tops of the strawberries. Go ahead and cut off the ends of the strawberries too, because you will want these bombs to stand up so your yogurt doesn’t spill out. Only cut off a tip a little larger than a pencil eraser, though.
Next take a small knife and hollow out the strawberries, but make sure there is still some skin left on the bottom to hold the yogurt.
Once that is done, scoop your yogurt into a small ziploc baggy. Seal it, and then snip a tiny hole in one corner.
Now just fill your strawberries up with the yogurt and set them on your serving dish on their small base.
This looks like a snack for the wrong holiday right now….but just wait!
Take your walnuts and crunch them into really tiny pieces. You can try to be graceful and chop them with a knife, or give in to your un-graceful tendencies and just use your hands to crush them like I did. 🙂
Sprinkle the walnut pieces on top of the strawberries and let it fall on the plate for a little extra garnish.
Top with a handful of those pretty blueberries, and there you have it!
