Oatmeal is not my favorite food. I know it’s healthy. I want to like it, but I just don’t. I feel the same way about yogurt and salmon. They are all nutrition powerhouses that I wish I loved. I haven’t given up on them though. I keep trying new recipes. Luckily, The Oldest loves oatmeal, so it’s never wasted. He always eats it! Since we have some extra time in the mornings these days I have been experimenting with more breakfast recipes. This time I did it!! I found an oatmeal recipe that I love!!! Not just tolerate, but actually really like. ❤️
Scrumptious Oatmeal
Serves: 4
Ingredients:
1 cup oatmeal
2 cups milk
1 banana, mashed
½ teaspoon vanilla
½ teaspoon cinnamon
1 T brown sugar* (optional)
½ cup walnuts, chopped
Directions:
In a medium saucepan, add all the ingredients except walnuts and heat over medium high heat. Stir occasionally. Once boiling, turn down to a simmer (medium-low) and cook for 3-4 minutes stirring every minute or so. Remove from heat and add walnuts.
*If your banana is overripe then you won’t have to add the brown sugar because it adds enough sweetness. You could also substitute honey for the brown sugar if you prefer it’s taste.
