December 10, 2019I love fall. Even here in Texas when the weather is way too hot and the leaves are all green, I still love fall. My fall candles have made their debut, but I have been so busy the pumpkin recipes haven’t started. So I’m sharing my secret pumpkin muffin recipe with you. This one was designed for those who can’t bake or don’t like to, because anyone can make these!
The secret is that you only need two ingredients: canned pumpkin and spiced cake mix. As a registered dietitian I usually don’t encourage processed foods, but honestly if I didn’t use a cake mix then it couldn’t really be called super easy pumpkin muffins. I am overlooking the processed cake mix, because these healthy muffins are packed with vitamin A, only have 3 grams of total fat (10 grams lower than regular pumpkin muffins), 0 mg of cholesterol, and have some fiber as well. Oh, and did I mention they are super yummy too!
To get started grab your favorite brand of spice cake mix and a 15 ounce can of pumpkin (not pumpkin pie filling). Mix together. The batter will be really thick. Pour into muffin pans. I like to use my stoneware, but if you have a regular muffin pan then I would recommend spraying with Pam instead of using muffin liners. Since the mixture is very thick if you want the muffins to look “pretty” you will need to smooth the top of the muffin. Then put them in the oven at 350 degrees for 18-20 minutes or until a toothpick comes out clean.
